Antonia. Everyone called her Nina.
My mother,
the best cook I know.
My mother cooked by feeling. She never followed recipes for her dishes; she had an instinct for how to get them right.
She ran her own company for as long as I’ve been alive. To me, she was a modern, everyday superwoman.
She was Greek, and she loved simple foods that allowed the ingredients to shine. She taught me a lot about cooking. She remains the best cook I have ever met.
Most of the recipes here are ones we found together, or ones I have found since. We both loved cooking and eating, and loved sharing what we made. Other dishes grew out of my own cooking conversations and experiments.
Nina’s Table is for that shared love of food, family, and the dinner table.
With love,
John
